In the cellar

Destemming, pigeage, 5–6 weeks of temperature-controlled skin-contact fermentation in concrete vats, then 12 months in French oak. Layered and age-worthy, with the precision of Sangiovese and the breadth of Merlot/Cabernet.

Red meats, braises, and slow-cooked game;
excellent with very aged cheeses.
